Apple, carrot and currant loaf

When it comes to the end of the week we sometimes have something left over in the fridge which I have not used up for suppers/snacks/lunches and this week it was 2 carrots and 2 apples.  Hence this little loaf was made.  And it was divine.  I slathered on a vanilla buttercream to make it a bit more decadent - I think if I made this in the future I would maybe just mix together some icing sugar and lemon juice and drizzle it on top.  Like the recipe called for, but hey, I wanted something naughty!

This is a comfort cake, the type where a small slice does not suffice.  You need to cut an enormous wedge and it must be had with a large mug of tea.  Bliss.

Ingredients

200g caster sugar
100g butter
2 eggs
300g self-raising flour
1 tspn baking powder
1 tspn all spice
3 medium carrots, grated
2 apples, chopped into small pieces (I grated mine)
100g currants

Preheat the oven to 170°C /Gas 4.
Lightly grease the sides of a loaf tin and line with baking parchment.
In a large mixing bowl, combine the sugar and butter and beat until smooth.
Once smooth, add one egg at a time, beating between each one until thoroughly combined.
Next, add the flour, baking powder and allspice to the bowl and mix until fully blended, then add the carrot, currants and apple and stir together well.
Pour into the loaf tin and place on the middle shelf of the oven to bake for about 45 minutes.

I used this recipe for the vanilla buttercream and wow, it was good.
