Vegan Sugar Biscuits

It was Jack's birthday recently and I sent him off to school with a batch of these for his class.  They are easy to whip up and the dough can be frozen too for when you need to make a quick batch of biscuits in a hurry.

You can have them plain and then add some icing or use chocolate chips.  We love rainbows in our house so we added some rainbow sprinkles.  No one is stopping you to make these double chocolate either by adding in some cocoa!

I only try to bake and cook with simple recipes - because no one has the time or the money to go and buy specialised ingredients really right?  I know if some people see the world healthy or vegan they automatically think they won't have half the ingredients but it doesn't have to be that way!



So if you are looking for a simple  sugar biscuit recipe that happens to be vegan then give this a go - you won't be disappointed.

Ingredients:

2 cups flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1 teaspoon salt
3 tablespoons sprinkles
1 cup sugar (I used brown but coconut would be good too)
1/2 cup oil (I used sunflower/olive combo)
1/4 cup water
1 teaspoon apple cider vinegar
1 teaspoon vanilla extract

Then all you need to do is:

Mix the flour, baking powder, salt, baking soda and sprinkles in a bowl.  
Make a well in the middle and add in the oil, sugar, water, apple cider vinegar and vanilla extract.
Mix the ingredients in the well until combined, then combine the wet and dry mixture until a dough forms.
Cover the bowl and pop in the fridge for about an hour.
Preheat the oven to 180 degrees.
Roll into small balls and place on the baking sheet, pressing them down slightly.
Bake for 8-10 minutes, making sure you take them out as soon as they start to puff and are slightly brown on the edges.

These can be stored for 5 days but I don't think they will last that long!
