I wanted to make something yummy that wasn't chocolate or cake so I tried these blueberry muffins. I was a bit skeptical when I read the recipe but I thought I would give it a go and I am so glad I did. I will definitely be making these again soon (i.e. this weekend). They are perfect as a breakfast treat or with a cup of tea in the afternoon. They would make a perfect homemade gift for a friend or why not just make them for yourself? I know I will.
I did let the mixture sit overnight - I made it up quickly before I went to bed and then popped them in the oven first thing in the morning. I think it was worth it, the mixture was light and fluffy and the tops were a little bit crisp. Just divine.
Blueberry Muffins
Makes 8
All you need:
110g plain flour
110g butter
65g caster sugar
2 eggs
1 1/2 tspn baking powder
125g blueberries (fresh or frozen)
Preheat your oven to 200 degrees.
Cream the butter and sugar then slowly add the eggs and mix until well combined.
Add the flour and baking powder and stir to combine.
Refrigerate for at least one hour or preferably overnight.
Place a spoonful of mixture into each case, filling each just over half way.
Place about 6-8 blueberries in each muffin, pressing firmly into the mixture.
Bake in the oven for 20 minutes or until golden brown.
Must be had with a cup of tea of course. Enjoy. ♥
